At this year’s Ballymaloe Festival of Food, chefs Erica Drum and Conor Spacey teamed up for a vibrant vegan pop-up in collaboration with Barrie Quinn of Portnoo Market Garden.

Tasked with creating a fully plant-based menu during the leanest season for vegetables, the trio rose to the challenge. Showcasing seasonal Irish produce and creative flair, they delivered a standout farm-to-fork dining experience that proved sustainability and flavor can go hand in hand — even in the toughest conditions.

Warm Tear and Share Bread With Herb Oil

Fresh Raw Crudiés, Whipped Bean and Herb Dip

Irish Miso Soup

Roast Cabbage, Crispy Kimchi , Spicy Aioli, Spelt Tabbouleh, Charred Leak and Onions
